The purpose of this article is to share an appropriate methodology in order to identify and incorporate health and safety risks to the quality management system certified by ISO 9001:2008 Standard, in the manufacturing processes of meat sausages at a company located in Latacunga, Ecuador. The applied methodology is explained in the design of the matrix of hazard identification and risk assessment, where environmental, health and safety hazards, are integrated into the quality management system, and the progress of the necessary actions are displayed, based on a certain initial diagnosis. The investigation allowed the establishment of the state of health and safety management in the processes and sub-processes, the incorporation of these risks and the implementation of corrective measures in order to solve the problems related to non-conformities of the quality management system in terms of the work environment; and also the decrease of accident rates.
