One of the activities that has played an important role among SMEs at the international level has been gastronomy, which is one of the most fragmented and dynamic sectors from the economic point of view. In Cuba, it is one of the areas that has expanded the most in the emerging private sector. Although the State is still in charge of the management of a significant number of spaces where good customer service is not appreciated, gastronomy has a significant weight in the level of employment in the private sector. This paper seeks an approach to the way in which the supply chain is managed under both types of ownership and aims to propose alternatives that allow complementing the two forms of management. The result is a way to relieve the State of its responsibilities and improve customer satisfaction levels.
