The Environmental Education (EE) addresses environmental problems through the analysis of interaction with various disciplines: natural, social and mathematical sciences, among others that integrate knowledge in a cross-cutting process that crosses teaching and educational learning. Therefore, the EA can intervene through a pedagogical strategy that promotes local, regional and global environmental issues. This premise, among others, is that motivates the issue of how responsible consumption contributes to reduce the accumulation of solid waste, one of the most acute environmental problems in the world. This topic is relevant to confront it from a Science, Technology and Society (CTS) approach, in order to contribute to the debate and promote a change in the dietary model, by reducing the consumption of meats and refined products in order to recover health and lay the foundations of a sustainable diet that avoids the overexploitation and depletion of essential resources such as water that will affect the life of future generations. Therefore, educational models are required that foster EE as a pedagogical strategy to train citizens capable of improving their environment. In addition, of how education and the contribution from the CTS approach should be organized in the construction of a citizen culture based on a strategy focused on the formation of social actors.
