The evidences of the importance of oxidative stress in the pathogeny of various pregnancy disorders have increased. The present paper shows the results of a nutritional education project for pregnant women from the health area of Manicaragua Polyclinic, in the central region of Cuba, that used as teaching aids a selection of videomaterials of the course “Vegetables in Human Nutrition”, which was broadcasted by the Cuban television. One of the objectives of the project was to motivate the participants to be on a diet with antioxidant-rich food of plant origin. The project was also characterized by the use of participative methods, the collective preparation of the dishes, and the discussion of their nutritional values, in particular during pregnancy. To evaluate the results, surveys of knowledge, attitudes and eating habits, and of semiquantitative frequency of food consumption were done. The results showed favorable modifications, both in the knowledge of the adequate nutrition of the pregnant woman and in the motivations, preferences and skills in the diet preparation, with a higher intake of bioavailable antioxidant vitamins from vegetables, aromatic herbs and fruits. It is recommended its extension for the nutritional education work of the pregnant woman at the primary health care level.
