The use of fluorides in dental caries prevention has been widely accepted since the 40´s of the last century when their relationship was exposed. Fluor has been used in various forms such as mouthwash, lacquers, varnish, toothpaste, tablets, drops, and foodstuffs like milk, water and salt. All of them, in one way or another, achieve their goals provided that the doses taken are appropriate. When methods are varied, fluoride consumption increases and represents a risk for health since it causes dental fluorosis instead of preventing caries. Hence the importance of setting up a Surveillance System for the main elements that may provide Fluor to the human body, that is, water, salt, toothpaste so as to guarantee adequate fluor intake levels. This article set forth the system designed in our country, taking the characteristics of the health system and the social organization as a basis.
