Resumen

The present research was developed in a buffet restaurant, where the lack of personnel limits the service capacity, specifically in the high season period, and reveals the main problems for the customer, which are expressed in long waiting lists to access the restaurant and also during the service. The aim of this article is to propose a procedure to determine the need for personnel in the service processes (catering), with the sole purpose of achieving its optimization. For its execution, techniques and methods are used, such as: As-Is diagram; operational analysis; continuous individual observation; timing of operations by elements and mathematical simulation. The number of personnel required for the buffet catering service is calculated and it is shown that, by means of mathematical simulation and timing of operations, equal results are obtained.
