The change that the country's highest management is calling to address food security and food production indicates that the science to be used cannot be disseminated through traditional methods and procedures that lead to sterile scientific results to the current interpellations of the nation. The present requires thinking, doing and knowing how to do more innovative from the sustainable point of view. In this regard, this research considers that the scientific approach in the area of food production needs, to a greater extent, the epistemological integration in its analyzes accompanied by the tempered ontological dimension, to each context and locality. Based on these theoretical assumptions and the guidelines issued by the President and by the provincial group's work system, this research aims to show the advances of the Observatory developed from the vision of the science of sustainability for the management of information and knowledge, in processes that support Food Sovereignty and Nutrition Education for Food Production with more Science, in Pinar del Río. The study uses different theoretical and empirical methods combined with techniques and methodologies for information and knowledge management. A result was obtained capable of managing large volumes of interconnected data for different purposes that facilitate, through information and knowledge management, observation, monitoring and surveillance on different topics, allowing better documenting of strategic and innovative decisions in food production from the proper use of Science.
