In the present investigation, a detrimental influence of dietary consumption habits has been identified in the development of coronary heart disease in the population of Piura (Peru). The consumer does not know what he eats because he does not understand what he reads on the food packaging. In this way, it is understood as a high social misinformation that attenuates the perception of risk in the consumer during the process of selection and consumption of food. The results provided by the behavioral observation of the consumer and the responses to the questionnaire show that citizens are not aware of the quality of their food consumption; Every time the scarce knowledge about food safety is correlated as an asymptomatic danger in the health of the consumer. Similarly, evidence has been obtained that Peruvian food legislation is not written in a "lingua franca", as many sugary foods such as chocolate hide the presence of hydroxymethylfurfural in their nutritional labeling, despite being carcinogenic with genotoxic potential and that the international health authorities require its quantification as a quality parameter and warning note on food.
