Yogur production has a wide demand in national market, however, the Paraíso Yogur Plant belonging to LABIOFAM Injectable Products Company, has had non-compliance with its production plans since its start-up. The objective of the research was to identify the main deficiencies of the yogur production process in the factory through the Process Assurance Model. Techniques such as direct observation, unstructured interview and brainstorming, were used. The main deficiencies found are related to: raw materials, assets and personnel, followed by transport and means of work, and to a lesser extent waste, service and information. They highlight the delays in the deliveries of raw materials by suppliers, deficiencies in the machinery by the absence of spare parts, as well as the absence of a refrigerated transport for yogurt.
