Resumo

This work was done in the meat processing plant UEB Holguin Frank Pais where varieties of meat products such as sausage, blood sausage, ground beef, mortadella or other occur. Initially the most significant environmental problems were identified and the Valuation of Environmental Impacts using the methodology of the Integrated Outstanding Approaches which is a method that values the environmental impacts according to the approaches that have been considered outstanding to characterize them (intensity, extension, duration, reversibility and risk) and Indexes environmental Impact Assessment (EIA) with are those that reflect the critical state of each of the actions and the environmental factors. In conducting the preliminary environmental assessment of the company was demonstrated, for the calculation of the criticality of actions and environmental factors, high amounts of solid and liquid waste, high energy consumption and also the high water consumption are generated in operations production and cleaning, so in this paper, is proposed and described 12 Opportunities Pollution Prevention (OPP) in order to prevent environmental pollution that contributes to the environmental industry.
