Cassava industry in Venezuela is mostly craft and developed in small communities and industries where the production has been affected by the lack of workforce and low productivity rates. In order to improve and optimize the development of this product some companies have focused time and resources to design systems that could scratch cassava in an efficient way, improving processes productivity indicators and offering a high quality product. The aim of this research work is address to evaluate peeling process and the energetic source influence over the LY-259 and LS-228 cassava mills productivity indexes. Those cassava mills are used in “Los Yopales” and “Los Sabanales” craft cassava industries at “Simon Rodriguez” municipality, Anzoategui, Venezuela. It realization was accomplished using the NC 34-37: 03 modified according the process and the studied machines nature and defining as the main productivity indicators to be determined: productivity by clean time (WL), by productive time (Wop), by operational work (WTpr) and by administrative work (Wtexp), among others. The main results show that WL; Wop; WTpr y Wtexp, belonging to LY-259 is higher in 36,3; 26,88; 29,02; 22,48%, over those achieved by LS-228 mill. Time indicators that mostly affect the process were the raining and electricity lacks (T8) and the administrative time (T07)
