Within the Gulf of Guayaquil in ecosystem areas of mangroves called estuaries, are accomplish commercial activities such as crab harvesting, fishing, shrimp capture, among other activities as well as offering various ecosystem services. The red crab (Ucides occidentalis) inhabits the mangrove ecosystems located in the Gulf of Guayaquil. It has a high demand for consumption nationwide, which has allowed the development of artisanal pulping activity. The objective of the study is to create a Manual of procedures for the production and commercial processes of pulp or red crab meat (Ucides occidentalis) in planning area 5, so that it can be commercialized nationally and internationally. A descriptive-exploratory methodology was applied with qualitative evaluation instruments that were used. It is a bibliographical research that carried out some interviews with experts on the mangrove topic and surveys to the members of the “6 de Julio” Crabbers Association.
