The production, variety, quality and prestige of Cuban rums grow progressively and ascendingly, constituting a product of high prestige and acceptance in Cuba and the world. It constitutes a challenge for the economic and social development of the country, maintaining the stability and variety of this product, allowing its presence in the increasingly demanding market. To achieve this end, it is necessary to incorporate scientific activity into their processes, whose results provide elements for a better technological direction through scientific procedures in the design and development of innovative products, where the ancestral experience acquired in the production of rum is combined with the contributions of science, contribution that constitutes an important legacy for future generations. Hence, the benefits and impacts that may result from the proposed result in the economic, technological, scientific, environmental and social contexts, which corroborates that behind the development of this drink of exquisite quality, is a whole gear that has tradition and culture, and that together with the contributions of science, can guarantee the sustenance and pride of having this Cuban product.
