The links between the ethanol and fodder yeast productions belonging to an agro-industrial complex, concerning the use of the carbon sources supplied by sugar cane juice for both productions, are analyzed through mathematical modeling and simulation in this work. The relations of these carbon sources with some operation parameters of the distillery and their influences on the production of fodder yeast are also considered. In order to conduct this research, a simulation model in Microsoft Excel has been elaborated in which, using mass balances, the COD of vinasse and its incidence in the production of fodder yeast are estimated. This work shows the convenience of the use of indirect heating in the ethanol distillation column as an alternative for the increase of the carbon concentration in the vinasse meant to yeast production. It also analyzes the effect of both, the efficiency of the alcoholic fermentation and of the alcoholic level of the wine on the COD of vinasse; and it shows the convenience of working with a high alcoholic level to benefit both productions. The methodology used allows to predict the environmental response of this type of productions.
