A longitudinal study during one year was followed in order to determine year season effect (dry and rain) and breed on some physico-chemical characteristics and composition of goat milk from Alpine French (AF) and Saanen (S), with the aim of establish criterion to buy goat milk. Milk samples were collected from both breeds (AF and S), reaching a total of 25 and 27 samples of each breed respectively. Milk analysis was carried out by the methods recommended by AOAC and FIL/IDF. AF milk showed higher values for protein, total solids (TS) and non-fatty (SNF) contents (P < 0.01) as well as for, density, fat and lactose values (P < 0.05). The lowest fat, protein and TS levels were found in both breeds during rainy season. Year season variations in pH and TS contents were statistically different (P < 0.01), along with SNF (P < 0.05) between goat milk under study. An interaction breed-year season was observed for protein (P<0.01), SNF (P<0.01) and TS (P<0.05).
