Abstract

Milk is product of quick diagnostic. It is widely used by the technical services and own producers. The productive behaviour analysis of the breed Holstein under the tropic conditions generally indicates a higher dairy production than native crossbreeds and breeds. However, in many cases, casein and solid yields are superior in these last years. Solid calculations per hectares and total cows are even more favourable. Lactation curves in dairy components and minerals, as well the relationships between them, indicate differences among genotypes and can be used for the interpretation of lactation physiological stage. The combination of little percentage differences of the dairy components in relation to the reference values for breed/region and the physico-chemical characteristics of milk (abnormal values in titrable acidity, pH, specific weight, thermal stability, alcohol test, etc) can be useful for identifying an Abnormal Milk Syndrome (SILA) picture. The control of the unfavourable impact of such alterations on the industrial processes and on the final quality of the products is a need for the dairy sector in a period of strong technological changes in the dairy industry in Latin-American and the Caribbean. This paper summarizes the experiences from the experimental and practical point of view obtained by the author and CENLAC/CENSA staff in the last 30 years, and brings new elements about the topic.
