Stabilak is a product that prolongs the conservation of crude milk without refrigeration. The quality control laboratory carries out tests to evaluate the conformity of Stabilak with respect to the established specification, this laboratory guarantees the reliability of the results with an internal control program in process of continuous improvement which include statistical tools for the quality control. Units of finished product segregated by non critical defects were selected as control samples verifying the homogeneity of intra and inter samples bottles, previous to the study of the precision as a parameter of assays validation and the construction of graphics of quality control. The critical rank was determined to establish the permissible difference between samples retorts and the coefficients of variation were calculated with acceptable values below 5% for all the tests. The results of the control samples analyzed under of repeatability generated the intervals of warning and action for the preparation of the control graphs. The introduced quality controls demonstrated to be effective and of easy application for the statistical control of the laboratory tests.
