In order to demonstrate the safety of organic milk produced in Tecpatan, Chiapas, Mexico, we investigated the presence of aflatoxin M1 by high performance liquid chromatography (HPLC). The results showed that 23.3% of the samples exceeded the maximum residue limit proposed by the Mexican regulation of 0.5 mg kg-1, while 62.7% exceeded the value of 0.05 mg kg-1 of the EU. The mean values of aflatoxin M1 in milk during the dry and rainy seasons were 3.53 ± 0.55 µg kg-1 and 0.17 ± 0.13 µg kg-1 respectively. The results confirmed that organic products can be exposed to residues and contaminants when not in compliance with good agricultural practices, affecting their safety.
