In order to demonstrate the safety of organic milk produced in Tecpatan, Chiapas, Mexico, we investigated the presence of aflatoxin M₁ by high performance liquid chromatography (HPLC). The results showed that 23.3% of the samples exceeded the maximum residue limit proposed by the Mexican regulation of 0.5 mg kg-1, while 62.7% exceeded the value of 0.05 mg kg-1 of the EU. The mean values of aflatoxin M₁ in milk during the dry and rainy seasons were 3.53 ± 0.55 µg kg^-1 and 0.17 ± 0.13 µg kg^-1 respectively. The results confirmed that organic products can be exposed to residues and contaminants when not in compliance with good agricultural practices, affecting their safety.
