Abstract

The fulfillment of the good dairy practices in the milk production chain was evaluated. It was composed by 30 producers from a Credit and Service Cooperative, two carriers and the sale staff. Information was collected through observation, visits, surveys and interviews. Defaults on cleaning and sanitation requirements were observed by comparing proportions which compromised milk quality. Based on this result, measures were established in order to reduce or eliminate the major difficulties found. These improvements should contribute to increases in production yields, quality and delivery of a safety product for consumers.
