Abstract

To know the sanitary situation of five slaughterhouses of the province of Manabí in Ecuador, swab samples were taken form operators' hands, forearms, chests, and knives. The counts of mesophilic aerobes, total coliforms and thermo-tolerant coliforms made in the samples were too high. The water used did not either meet the microbiological requisites for the drinkable water required for processing foods. It was concluded that these slaughterhouses did not have the necessary sanitary conditions to obtain bovine carcasses with low contaminations of the microorganisms examined.
