Abstract

The main objective of this paper is to describe the methodology design for the functioning of the system of surveillance of the environmental risk factors of communicable diseases and its implementation at a day care center, in Havana City. The training of the health personnel in the hygienic and epidemiological aspects related to the communicable diseases and their environmental risk factors is a fundamental part of the design. It is also stated in the design the utilization of the system of analysis of risk and critical control points applied to food hygiene, according to the characterisistics and needs of the proposed objectives. In this paper, an example of the system functioning is given and the results of its application to the day care center selected for this study are shown.
