Abstract

Fruit and vegetables quality evaluation and monitoring during pre and post harvest stage are very important for the adequate support decision and handling. The aim of this research work is addressed to study the color index variation during pineapple fruit (Cayena Lisa variety) conservation at environment temperature. During this study 100 pineapple fruits (Cayena Lisa) variety (10 fruits per sample, divided in group A (9 samples retiring one sample per day) and group B (1 sample, used as control group)), harvested in Ho Chi Minh enterprise at Jaruco, Mayabeque, were assessed to achieve IC changes during ripeness using the photography technique and the specialized software Adove Photoshop v. 6.0.   Principal results reveal that fruits stored at environment temperature 25 °C and relative humidity of 84 % have 9 shelf life days, suffering an obvious variation in IC with the pass of the days what is presented in a ripeness color scale.  Also was obtained the optimal period for this variety be commercialized and the different ripeness stages for which goes by the fruit during storage during conservation at environment temperature.
