The coffee sector carries out the processing of coffee by the wet method, where polluting liquid waste is generated due to its acidity (acid pH), sedimentary solids (SS) and chemical oxygen demand (COD) values. Therefore, the objective of this work is to review the technologies to improve the coffee processing and those to use its effluents with ecological approach in El Nicho Pulper, in Cienfuegos Province, Cuba. Firstly, the technologies for coffee benefit process are described. Secondly, the peculiarities to implement new technologies are emphasized and, finally, the possibility of their implementation in Cuba is analyzed.
