A hydroalcoholic extract was obtained from the petals of the flower of majagua (Talipariti elatum S.W.) rich in anthocyanins, for which the extraction process was optimized according to the total content of polyphenols and anthocyanins, with ethanol as a factor (% v/v) and the extraction time. The optimal extraction conditions corresponded with 79% v/v of ethanol and 12h as the extraction time. The optimized hydroalcoholic extract showed of total polyphenols and anthocyanins of 12034mg gallic acid/L and 10mg/L, respectively. In the optimized extract, metabolites were identified as: terpenes/steroids, reducing sugars, mucilages, polyphenols (anthocyanins, flavonoids and tannins). The extract presented a reddish-orange color in correspondence with the most probable anthocyanins in it: pelargonidin, cyanidin and peonidin, as well as some of its glycosidic variants.
