Environmental performance of "Chichi Padrón"slaughterhouse is presented in this paper. As a first step the environmental assessment is conducted according to the methodology applied by CITMA and Conesamatrix is applied to assessenvironmental issues in order of priority, concluding that the two most significantaspects are reduction of water resources for other uses and pollution ofsurface waters by dumping of liquid waste. Subsequently the basic elements of the Environmental Management System are defined, and the methodological and scientific basis to eliminate or mitigate negative aspects caused to the environment are established.
