Resumen

The study evaluate different levels of gamma radiation (1, 5, 10, 20 and 25 kGy) on organoleptic characteristics and some quality parameters of the essential oil of fruits of Azaridachta indica A. Juss extracted using the technique cold pressing. Organoleptic, physical and chemical variables for the evaluation of the quality of the irradiated oil were considered. A completely randomized design with six replicates is applied. The distribution and normality of data were taken into account. The irradiance levels evaluated stimulated variations according to the doses applied. However, none of the variables contemplated in the study were modified significantly (p ≥ 0,05) and the organoleptic characteristics remained unchanged with respect to the control. Nor did it stimulate the formation of more complex compounds according to the chromatogram developed on HPLC.
