In this work, the extraction of pectin from fresh and sun-dried coffee pulps from Robusta coffee (Coffea canephora) was studied. For this, the influence of temperature, extraction time, pH and liquid-solid ratio on the extraction performance were evaluated. The pH was the only factor that significantly influenced the extraction, reaching the best results at pH 1. Yields of 5,91 % and 4,99 % were obtained for the fresh and dry pulps, respectively. The pectin extracted from the fresh and dried pulps presented, respectively, 82,1 % and 87,8 % of galacturonic acid and number average molar weights of 10 500 g/mol and 11 600 g/mol. The solar drying of the coffee pulp did not influenced appreciably on the extraction performance, as well as on the quality of the pectins obtained.
