The genus Pleurotus spp. presents a ligninolytic multi-enzyme complex, within which are laccases (EC 1.10.3.2, p-diphenol:dioxygen:oxidoreductase). These are part of the enzyme group called oxidases blue unlike most produce reduce oxygen and water instead of peroxide. In this work, is evaluated the laccase activity of three strains: Pleurotus ostreatus CCEBI 3021, Pleurotus ostreatus, var FloridaCCEBI 3024 and Pleurotus sajor-caju CCEBI 3027, cultivated on coffee pulp. Determination of laccase activity was carried out in inoculum and colonization stages. The process was carried out by conducting the aqueous extraction of crude enzyme, using guaiacol as substrate. The results show that the strain with the highest laccase activity in stage of inoculum was CCEBI 3024 with 5.214 ± 0.059 Ug-1; at the stage of colonization CCEBI 3021 with 4.512 ± 0.479 Ug-1.
