The coffee process industries, that benefit the wet coffee, generate large amounts of coffee pulp that are discharged into the environment, constituting a contamination for this. The coffee pulp has an appreciable amount of fermentable materials, which can be exploited by solid-state fermentation by cultivating edible mushrooms of the Pleurotus genus, which has been the object of numerous studies because its fruiting body constitute a food and also because is a producer of enzymes of Industrial interest. The objective of this work was to evaluate the productivity of two strains of Pleurotus using two types of bioreactors: in bags and in tray. The study is carried out in the research-production plant of the Industrial Biotechnology Center Study, using coffee pulp Coffea canephora Pierre ex Frhoener as substrate. The substrate was inoculated with two strains CCEBI 3024 and CCEBI 3023, with 7 replications for each bioreactor, at a ratio of 10% of the wet substrate weight. As productivity parameters, Biological Efficiencies (EB), Yield (R) and Precocity (P) were measured. The results using the bags showed that Biological Efficiencies (57, 7% -59, 4 %,) and Yield (16.5% -17.0%) were similar for both strains, only showed significant differences in Precocity. With respect to tray culture, Biological Efficiencies (25.2% -26,0%) and Yield (7.3% -7.4%) were also similar, with a significant difference in Precocity. According to the productivity shown, the culture in bags for both strains can be concluded more convenient.
