ABSTRACT
The objective of this work was to determine the best hydrolysis conditions of the Lactozym Pure 6500 L and Saphera 2600 L lactases for the production of goat milk without lactose. For the development of the work, the lactoses Lactozym Pure 6500 L of yeast origin (Kluyveromyces lactis) and Saphera 2600 L of bacterial origin (Bacillus licheniformes) were used. Goat milk from the crossing of the Anglo Nubian of Ecuador native breed was used, milk was standardized at 3 % fat, pasteurized in tanks at 85 ºC for 30 min. The two enzymes were applied at temperatures of 4,10 and 35 °C and at concentrations of 0,06 and 0,09 g / L In each experiment the cryoscopic point was measured in triplicate every 30 min and the degree of hydrolysis was estimated in percentage. The two enzymes showed the same behavior in terms of their hydrolysis power at the temperatures tested. The most favorable conditions for the hydrolysis of lactose of goat's milk for its subsequent fermentation would be the temperature of 35 oC with a dose of 0,06 g / L of enzyme for a reaction time of approximately 90 min.
