The traceability of farm products implies the development and application of new processes that use and appropriate technological advances based on the classical concepts of traceability to facilitate the tracking along supply chains. Technological advances allow the implementation of new measuring instruments, sensors and communication devices in order to deliver data regarding the status of variables such as temperature, humidity, location (GPS), pitch and roll (gyroscope) in real-time. Using those variables it is possible to increase the visibility of processes and generate a greater volume of data that can be used to identify conditions that affect fresh products which are not covered by traditional approaches of traceability. This research addresses those aspects through the consolidation of IoT system architecture including data acquisition, storage, processing, analysis and presentation to the end user.
