It is characterized by improving the productive performance and health of animals of zootechnical interest. The objective of this study was to characterize the chemical and microbiological composition of five creams of Saccharomyces cerevisiae, obtained from different Cuban distilleries with the purpose of elaborating PROBIOLEV®. For the chemical characterization of creams, descriptive statistics was carried out on dry matter, ashes, crude and true protein, as well as reducing sugars, total carbohydrates and pH. From the microbiological point of view, a count of contaminating microorganisms was performed and organoleptic characteristics were analyzed.The bromatological evaluation showed values &#8203;&#8203;between 15-20% of dry matter, 16-18% of ash, 80-85% of organic matter, 35-40% of crude protein, 32-36% of true protein, 4-6% of total carbohydrates and 2-4% reducing sugars. Creams were found not to contain contaminating microorganisms such as coliforms, Pseudomonas aeruginosa, Staphylococcus aureus, Salmonella and Bacillus cereus. From these results, it is concluded that the different creams of S. cerevisiae, without considering their distillery of origin, have adequate chemical and microbiological characteristics for their use in the production of PROBIOLEV®.]]></p></abstract>
<abstract abstract-type="short" xml:lang="es"><p><![CDATA[Resumen El aditivo simbiótico PROBIOLEV® incluye en su formulación crema de levadura procedente de destilería. Se caracteriza por mejorar el comportamiento productivo y la salud de los animales de interés zootécnico. El objetivo de este estudio fue caracterizar la composición química y microbiológica de cinco cremas de Saccharomyces cerevisiae, obtenidas de diferentes destilerías cubanas con el propósito de elaborar PROBIOLEV®. Para la caracterización química de las cremas se realizó estadística descriptiva a la materia seca, cenizas, proteína bruta y verdadera, así como a los azúcares reductores, carbohidratos totales y pH. Desde el punto de vista microbiológico, se realizó el conteo de microorganismos contaminantes y se analizaron las características organolépticas. La evaluación bromatológica mostró valores entre 15-20% de materia seca, 16-18% de ceniza, 80-85% de materia orgánica, 35-40% de proteína bruta,32-36% de proteína verdadera,4-6% de carbohidratos totales y 2-4% de azúcares reductores. Se comprobó que las cremas no presentan microorganismos contaminantes como coliformes, Pseudomonas aeruginosa, Staphylococcus aureus, Salmonella y Bacillus cereus. A partir de estos resultados se concluye que las diferentes cremas de S. cerevisiae, sin tener en cuenta la destilería de origen, presentan características químicas y microbiológicas adecuadas para su utilización en la elaboración de PROBIOLEV®.]]></p></abstract>
