Se utilizaron 10 estómagos de cerdos sanos que fueron lavados y salados en seco. El proceso de secado se realizó en estufa a una temperatura de 40 ± 1ºC. Para el análisis del contenido de humedad se usó el método rápido, de acuerdo a lo descrito en la norma cubana (NC 275: 2003). Los resultados se expresaron como contenido de agua por gramos de materia seca. La adición de cloruro de sodio (NaCl) a una proporción 1:4 (NaCl: estómago) contribuyó con la pérdida de agua durante el proceso de secado de los estómagos. Este método demostró ser eficaz para la reducción del contenido de agua de los estómagos de cerdos en un tiempo de 96 horas. El uso de un método artificial de secado, para la obtención del coagulante lácteo de origen animal, constituye una forma efectiva para garantizar su calidad, inocuidad y conservación.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[ABSTRACT This study was aimed at assessing the drying method of pig stomachs under artificial conditions. The 10 healthy pig stomachs used were washed and dry-salted. The dehydration process was carried out in an oven at a temperature of 40 ± 1ºC. For the analysis of moisture content, the rapid method was used, as described in the Cuban standard (NC 275: 2003). Results were expressed as water content per gram of dry matter. The addition of sodium chloride (NaCl) at a 1:4 ratio (NaCl: stomach) contributed to the loss of water during the drying process of stomachs. This method proved to be effective in reducing the water content of pig stomachs in 96 h. The use of an artificial drying method to obtain animal milk rennet is an effective way to guarantee its quality, safety and conservation.]]></p></abstract>
