<self-uri xlink:href="http://scielo.sld.cu/scielo.php?script=sci_arttext&amp;pid=S2223-48612019000100051&amp;lng=en&amp;nrm=iso"></self-uri><self-uri xlink:href="http://scielo.sld.cu/scielo.php?script=sci_abstract&amp;pid=S2223-48612019000100051&amp;lng=en&amp;nrm=iso"></self-uri><self-uri xlink:href="http://scielo.sld.cu/scielo.php?script=sci_pdf&amp;pid=S2223-48612019000100051&amp;lng=en&amp;nrm=iso"></self-uri><abstract abstract-type="short" xml:lang="es"><p><![CDATA[RESUMEN El proceso normal de obtención de quitina a partir del exoesqueleto de camarón, consiste en la extracción de compuestos asociados mediante pasos sucesivos de desmineralización, desproteinización y despigmentación, usando ácidos y álcalis fuertes, lo que constituye un riesgo para la integridad personal y el ambiente. Una solución a este problema, es el empleo de métodos alternativos, como la extracción enzimática, que además de mantener íntegra la estructura de la quitina la deja sin residuos que puedan afectar sus aplicaciones biomédicas. El exoesqueleto una vez limpio, seco y molido hasta 300 &#956;m, se desmineraliza, hasta un 95,67% usando ácido acético glacial al 15% a temperatura ambiente y en agitación durante 3 horas. Un tratamiento con &#945;-quimotripsina en una relación enzima-sustrato E/S 0,7:100 (QB2) presenta un mayor porcentaje de hidrólisis de proteína, 73,48% que la relación E/S 0,5:100 (QB1). No obstante, se encontró que no existe diferencia estadísticamente significativa entre los diferentes tratamientos, tan sólo se observó una diferencia entre los tratamientos QB1 y QB2, lo que parece indicar que a mayor concentración de quimotripsina ocurre una mayor desproteinización del sustrato. Por su parte, los tratamientos con papaína alcanzaron porcentajes de desproteinización similares, 65,43% y 67,13% para relaciones E/S de 0,5:100 y 0,7:100 respectivamente, lo que indica que ambos tratamientos son estadísticamente aceptables. En cuanto al grado de desacetilación, todos los tratamientos mostraron un valor de aproximadamente 20% y una masa molecular del orden de 106, demostrando así la efectividad de la combinación de tratamientos con ácidos débiles y enzimas proteolíticas.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[ABSTRACT The normal process of obtaining chitin from the shrimp exoskeleton consists in associated compounds extraction through successive steps of demineralization, deproteinization and depigmentation, using strong acids and alkalis. It constitutes a risk for personal and environmental integrity. A solution to this problem is the alternative methods use, such as enzymatic extraction, which in addition to maintain the structure of chitin intact, do not produce wastes that may affect their biomedical applications. The exoskeleton, once clean, dry and ground to 300 &#956;m, is demineralized, up to 95,67% using glacial acetic acid at 15% at room temperature and stirring for 3 hours. A treatment with &#945;-chymotrypsin in an enzyme-substrate ratio E / S 0,7: 100 (QB2) shows a higher percentage of protein hydrolysis, 73,48% than the E / S ratio 0,5: 100 (QB1) .
