Objetivo:  caracterizar los hidrocarburos aromáticos policíclicos (HAP) y los bifenilos policlorados (BPC) en suelos con diferentes usos en La Habana y Mayabeque y la relación que tienen los HAP en el pasto, la leche y los vegetales.  Métodos:  Se determinó la concentración de la &#425;16 HAP y &#425;7 BPC en suelos y alimentos con el empleo de cromatografía gaseosa acoplada a espectrometría de masa.  Resultados:  La &#425;16 HAP en los suelos de áreas urbanas fue superior a los de las rurales. El 17 % de los suelos de uso agropecuario se consideran contaminados (&#425;16 HAP &gt; 200 µg/kg). Por primera vez se informó a nivel regional la biodisponibilidad de los HAP, donde los compuestos de bajo peso molecular (BPM) resultaron más biodisponibles. Los suelos estudiados no se consideraron contaminados por BPC (&#425;7PCBs &gt; 500 µg/kg). Se reportó por primera vez en Cuba, la presencia de HAP en pasto, leche y vegetales, predominando los compuestos de BPM. La concentración de los HAP en la leche y vegetales oscilaron de 6,86 µg/kg a 13,49 µg/kg y de 8,00 µg/kg a 33,00 µg/kg respectivamente. Se concluye que la leche es inocua para los HAP. Sin embargo, en el 100 % de los vegetales, la concentración de la &#425;4HAP-APM sobrepasó el 1 &#956;g/kg establecido para otros alimentos en la regulación de la Unión Europea, lo que compromete su inocuidad.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[ABSTRACT  Introduction:  Soil acts as a major environmental recipient matrix of environmental pollutants and may affect food safety. Objective: Characterizing the polycyclic aromatic hydrocarbons (PAH) and polychlorinated biphenyls (PCB) in soils from different uses and the relation of the PAH in the grass, milk and vegetables.  Methods:  The concentration of &#425;16 PAHs y &#425;7 PCBs was determined in soils and food by gas chromatography coupled with mass spectrometry.  Results:  The concentration of the &#425;16 PAHs in the soils from urban areas was higher than rural areas. 17% of the agricultural soils was contaminated (&#425;16 PAHs &gt; 200 µg/kg). The bioavailability results about PAHs in soils were the first reports at a regional level, where the low molecular weight compounds (LMW) were more bioavailable. The studied soils were not contaminated by PCB (&#425;7PCBs &gt; 500 µg/kg). The presence of PAH was informed by the first time in grass, milk and vegetables in Cuba, the LMW compounds being predominant. The PAH concentration in milk and vegetables had a range of 6.86 to 13,49 and 8.00 to 33.00 µg/kg respectively. It is concluded that milk is safe for PAH. However, 100% of the sample from vegetables had a concentration of the &#425;4PAH-high molecular weight above 1 &#956;g/kg, established for other foods by the Europe Union; this compromises their safety.]]></p></abstract>
