For this, tests related to some physical, mechanical and chemical variables were carried out, with the objective of evaluating these parameters and determining the quality of the fruits for a later study of shelf life. Polar and equatorial diameters of the fruits were obtained, which ranged from 1.56 to 1.61 cm and from 2.05 to 1.72 cm, respectively and the green fruits showed the largest diameters. The weight ranged from 3.27 to 4.03 g on average, therefore, according to their morphology, they are considered small fruits and of low quality. The best OSH values were recorded in green fruits with an average of 10.35 º Brix. Similarly occurred with the pH, where an average value of 4.43 was observed, while red fruits had a higher percentage of citric acid with 1.75%. The material that could cause less damage to the fruits during transportation and post-harvest handling is plastic, since it has a relatively low coefficient of friction of 0.66 and 0.64.]]></p></abstract>
<abstract abstract-type="short" xml:lang="es"><p><![CDATA[RESUMEN El presente estudio se llevó a cabo entre los meses de agosto y septiembre del 2019, en la comunidad Ribera Miguel Hidalgo del municipio de Copainalá, Chiapas, México. Para ello se realizaron ensayos relacionados con algunas variables físicas, mecánicas y químicas, con el objetivo de evaluar estos parámetros y determinar la calidad de los frutos para un posterior estudio de la vida en anaquel. Dentro de los principales resultados obtenidos se destacan el diámetros polar y ecuatorial de los frutos los que oscilaron desde 1,56 a 1,61 cm y de 2,05 a 1,72 cm respectivamente, siendo los frutos de color verde los de mayores diámetros. El peso osciló entre 3,27 a 4,03 g como promedio, razón por la cual se consideran frutos pequeños y de baja calidad desde su morfología. Los mejores valores de SST se registraron en los frutos de color verde con un promedio de 10,35 ºBrix, así mismo ocurrió en el pH con un valor promedios de 4,43, mientras que los frutos rojos presentaron mayor porcentaje de ácido cítrico con 1,75%. El material que menos daños pudiera ocasionar a los frutos durante la transportación y manipulación poscosecha es el plástico, por presentar un coeficiente de fricción relativamente bajo de 0,66 y 0,64.]]></p></abstract>
