The factors were temperature (20, 25 and 30oC) and fermentation time (0, 24 and 48 h). Measurements of the indicators pH, ammonia, organic acids, crude fiber, crude protein and true protein, dry matter, ash and microbiological analysis were performed. The results of the microbiological analysis carried out on the fermentation of post-harvest wastes of S. tuberosum shows a high concentration of lactic acid bacteria (LAB) and the low pH found eliminated the pathogens agent(p &lt;0.0001). In the solid fermentation with the microbial preparation, low propionic acid and ammonia values were recorded at 20oC and an increase in lactic acid (p &lt;0.0001). There is a marked effect of temperature on humidity during fermentation. Low fiber and DM values were recorded. True protein increased at 24 h by 2.7 percentage units at 25oC in correspondence with the microbial concentration of mesophilic bacteria (5.5x107 CFU/ mL), LAB (6.1x107 CFU/mL) and yeasts (1.3x104 CFU/mL). It is concluded that the solid state fermentation of post- harvest wastes of Solanum tuberosum and a microbial preparation with lactic activity favors this process and other formulations with drying and fibrous material should be studied for an effective ensiling process of the final product.]]></p></abstract>
<abstract abstract-type="short" xml:lang="es"><p><![CDATA[Resumen Con el objetivo de estudiar la fermentación en estado sólido de residuos poscosecha de Solanum tuberosum y un preparado microbiano, se realizó un experimento con diseño completamente aleatorizado con arreglo factorial (3x3) y tres repeticiones. Los factores fueron la temperatura (20, 25 y 30 oC) y el tiempo de fermentación (0, 24 y 48 h). Se realizaron mediciones de los indicadores pH, amoníaco, ácidos orgánicos, fibra bruta, proteína bruta y verdadera, materia seca, cenizas y análisis microbiológico. Los resultados del análisis microbiológico realizado a la fermentación de residuos poscosecha de S. tuberosum muestra alta concentración de bacterias ácido lácticas (BAL) y el bajo pH encontrado eliminó los agentes patógenos (p&lt;0.0001). En la fermentación sólida con el preparado microbiano se registraron valores bajos a los 20oC de ácido propiónico y amoniaco, y aumento del ácido láctico (p&lt;0.0001). Hay marcado efecto de la temperatura en la humedad durante la fermentación. Se registraron valores bajos de fibra y MS. La proteína verdadera se incrementó a las 24 h en 2.7 unidades porcentuales a 25oC en correspondencia con la concentración microbiana de bacterias mesófilas (5,5x107 UFC/mL), BAL (6,1x107 UFC/mL) y levaduras (1,3x104 UFC/mL). Se concluye que la fermentación en estado sólido de residuos poscosecha de Solanum tuberosum y un preparado microbiano con actividad láctica favorece este proceso y deben ser estudiadas otras formulaciones con material secante y fibroso para un proceso efectivo de ensilado del producto final.]]></p></abstract>
