<self-uri xlink:href="http://scielo.sld.cu/scielo.php?script=sci_arttext&amp;pid=S2079-34802021000100004&amp;lng=en&amp;nrm=iso"></self-uri><self-uri xlink:href="http://scielo.sld.cu/scielo.php?script=sci_abstract&amp;pid=S2079-34802021000100004&amp;lng=en&amp;nrm=iso"></self-uri><self-uri xlink:href="http://scielo.sld.cu/scielo.php?script=sci_pdf&amp;pid=S2079-34802021000100004&amp;lng=en&amp;nrm=iso"></self-uri><abstract abstract-type="short" xml:lang="en"><p><![CDATA[Abstract In order to evaluate the solid-state fermentation of post-harvested wastes of S. tuberosum (potato), inoculated with a microbial preparation, analysis of variance was carried out according to a completely randomized design with factorial arrangement (3 x 3) for the fermentative indicators crude protein, true protein, dry matter, neutral detergent fiber, acid detergent fiber, pH, organic acids, lactic acid, NH3 and microbiological analysis. The factors were 15 and 25 % of inclusion of three fibrous plant material (wheat bran, alfalfa meal and rice meal) and three times of fermentation (0, 24 and 48 h) with three repetitions. The inclusion of 15 and 25 % of the different fibrous materials in the fermentations was performed under the same conditions, and showed interaction between the evaluated indicators and the fermentation time (P &lt; 0.0001).The pH, dry matter, neutral detergent fiber and acid detergent fiber notably decreased in the three fibrous materials. There were lower values of lactic acid and ammonia (P &lt; 0.0001) with dilution effect by the fiber. There were not pathogenic microorganisms, but there were significant values of acid lactic bacteria, at 48 h, in the mixture of alfalfa meal of 3.03 x 107 and 7.67 x 107 UFC/mL for 15 and 25 % of inclusion, respectively. The crude protein and true protein increased in 25 % with alfalfa and the dry matter reached at the end of the process 75.80 % for this treatment. It is concluded that the inclusion of fibrous materials in the solid-state fermentation of post harvested wastes of S. tuberosum, inoculated with a microbial preparation with acid lactic activity, have positive effect on their chemical and microbiological composition. It is recommended by the quality indicators of the final product, the use of 25 % of alfalfa meal, fermented at 20°C during 48 h.]]></p></abstract>
<abstract abstract-type="short" xml:lang="es"><p><![CDATA[Resumen Con el propósito de evaluar la fermentación en estado sólido de residuos poscosecha de S. tuberosum (papa), inoculados con un preparado microbiano, se realizó análisis de varianza según diseño completamente aleatorizado con arreglo factorial (3 x 3) para los indicadores fermentativos proteína bruta, proteína verdadera, materia seca, fibra neutro detergente, fibra ácido detergente, pH, ácidos orgánicos, ácido láctico, NH3 y análisis microbiológico. Los factores fueron 15 y 25 % de inclusión de tres materiales vegetales fibrosos (salvado de trigo, harina de alfalfa y harina de arroz) y tres tiempos de fermentación (0, 24 y 48 h) con tres repeticiones. La inclusión del 15 como del 25 % de los distintos materiales fibrosos en las fermentaciones se realizó en las mismas condiciones, y mostró interacción entre los indicadores evaluados y el tiempo de fermentación (P &lt; 0.0001). El pH, materia seca, fibra neutro detergente y fibra ácido detergente disminuyeron notablemente en los tres materiales fibrosos. Se encontraron valores muy bajos de ácido láctico y amoniaco (P &lt; 0.0001) con efecto dilutivo por la fibra. No hubo presencia de microorganismos patógenos, y sí valores significativos de bacterias ácido lácticas, a las 48 h, en la mezcla con harina de alfalfa de 3.03 x 107 y 7.67 x 107 UFC/mL para 15 y 25 % de inclusión, respectivamente. La proteína bruta y verdadera se incrementaron en 25 % con harina de alfalfa, y la materia seca alcanzó al término del proceso 75.80 % para este tratamiento. Se concluye que la inclusión de materiales fibrosos en la fermentación en estado sólido de residuos poscosecha de S. tuberosum, inoculados con un preparado microbiano con actividad ácido láctica, tiene efecto positivo en su composición química y microbiológica. Se recomienda por los indicadores de calidad del producto final, la utilización de 25% de la harina de alfalfa, fermentado a 20°C durante 48 h.]]></p></abstract>
