La extracción asistida por ultrasonido (EAU), ha proporcionado importantes beneficios en la producción de aceites como son: mayor rendimiento, disminución del tiempo de operación y consumo de disolventes, que la hace amigable con el planeta.  Objetivo: Proporcionar los fundamentos conceptuales, aplicaciones y potencialidades de la extracción asistida por ultrasonido en el rendimiento, características físico-químicas y bioactividad de los aceites obtenidos de fuentes vegetales.  Materiales y Métodos: Se revisaron 71 publicaciones originales y de revisión, empleando técnicas y metodologías relacionadas con la extracción y caracterización de aceites vegetales empleando la EAU, disolventes y prensado en distintos tipos de semillas correspondiente al período 2013-2022, considerando la calidad y naturaleza de las publicaciones.  Resultados y Discusión: Los artículos investigados demostraron que, con la EAU en vegetales se obtuvieron aceites vegetales, esenciales, compuestos fenólicos; tanto de las semillas (chía), las hojas (guanábana) y mesocarpo (pulpa de aguacate). Los nuevos aportes y métodos optimizaron la extracción de los compuestos requeridos, con la necesidad de aplicarlos en la industria de alimentos, cosméticos y farmacéutico.  Conclusiones: Los artículos revisados en la obtención de aceites vegetales empleando la EAU, establecieron que esta técnica empleó disolventes orgánicos como el hexano, pero su consumo es menor a los métodos tradicionales; disminuyó tiempos de trabajo; los rendimientos de los extractos fueron más eficientes y las bioactividades benefician al organismo como antioxidantes (canola) o anticancerígenos (oliva).]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[ABSTRACT  Introduction: The extraction of vegetable oils with organic solvents pollutes the environment and is expensive. Ultrasound-assisted extraction (UAE) has provided important benefits in the production of oils, such as: higher revenues, decreased operation time and solvent consumption, which makes it friendly to the planet.  Objective: Provide the conceptual foundations, applications and potentialities of ultrasound-assisted extraction in the performance, physical-chemical characteristics and bioactivity of oils obtained from plant sources.  Materials and Methods: 71 original and review publications were studied, using techniques and methodologies related to the extraction and characterization of vegetable oils using EAU, solvents and pressing in different types of seeds corresponding to the period 2013-2022, considering the quality and nature of the publications.  Results and Discussion: The reviewed articles showed that, with the UAE in vegetables, vegetable and essential oils, and phenolic compounds were obtained; from both the seeds (chia), the leaves (soursop) and the mesocarp (avocado pulp). The new contributions and methods optimized the extraction of the required compounds, with the need to apply them in the food, cosmetic and pharmaceutical process industry.  Conclusions: The review of the articles dealing with the production of vegetable oils using the EAU, established that this technique used organic solvents such as hexane, but its consumption is lower than traditional methods; decreased work times; the yields of the extracts were more efficient and the bioactive properties benefit the organism as antioxidants (canola) or anticarcinogenic (olive).]]></p></abstract>
