This investigation aims at proposing a procedure that enables getting the porcentage from attraction of the accessorial services in the extra catering net in tourist destinies, as well as the attributes to determine it. The general procedure developed counts on a collection of tools adjusted to the empresarialcuban reality, in order to identify the factors that inhibit the achievement of superior results and to take decisions that allow the elevation of the attraction of these services as a base for its improvement. Amond the techniques used on this project we have Delphi method, opinion poll, not probabilistic sampling, questionnaire and the use of different software for processing the information. It applied over the proposed procedure to a representation of the restoration services of the touristic destiny of Varadero, in order to determine the main objective of improvement from the position of attributes of attraction in the matrix grade-importance of the perceived presence.
