Abstract

This study was aimed at assessing the drying method of pig stomachs under artificial conditions. The 10 healthy pig stomachs used were washed and dry-salted. The dehydration process was carried out in an oven at a temperature of 40 ± 1ºC. For the analysis of moisture content, the rapid method was used, as described in the Cuban standard (NC 275: 2003). Results were expressed as water content per gram of dry matter. The addition of sodium chloride (NaCl) at a 1:4 ratio (NaCl: stomach) contributed to the loss of water during the drying process of stomachs. This method proved to be effective in reducing the water content of pig stomachs in 96 h. The use of an artificial drying method to obtain animal milk rennet is an effective way to guarantee its quality, safety and conservation.
