Microbiological evaluation of products acquired at the wholesale fish market of Ventanilla, Peru. The objective of this paper was to carry out a microbiological evaluation of the fresh fish and shellfish sold at the wholesale fish market of Ventanilla, the second largest market of the capital (Lima-Peru). 35 samples acquired in this market during 5 weeks in a row during february, march and april, 2001, (summer in Peru) were analyzed. The samples were subjected to trials for detecting salmonella, Vibrio cholerae o1 and o139 and Listeria monocytogenes, as well as to the numeration of faecal coliforms and Escherichia coli. Salmonella ssp was identified in 2 samples corresponding to Cancer ssp (crab) and Trachurus picturatus murphyi (jurel). The samples from fan shell and crab exceeded the permissible maximum levels for these products. This study evidence the insecurity of the consumption of raw fresh sea food sold at this market
