Abstract

The water use per hL of beer must be of 10 -15 hL /hL. In order to determine the real, total and consumer consumptions, daily readings of the water volumes consumed over three years (2013-2015) were taken and processed using descriptive statistics through the STATGRAPHICS XVI package to obtain the values and more frequent intervals of specific and total water usage as well as average, minimum and maximum demands. The daily coefficient of variation was also determined. The current total water consumption is 1397 m3/d (7,5 m3 of water/ m3 of product), in %: 62 is soft water, 20% for filter, 11% for social consumption, and 7% for mill; monthly demand is 1393 m3/d. The daily coefficient of variation is 2,13.
