Abstract

A tourist gastronomic route is characterized by having the signage and the adequate conditions to be travelled independently, that is, without the need of hiring a guide or specialized company, requiring an adequate strategy and management. Precisely, the objective of the present investigation was to elaborate a rescue project of the tourist gastronomic route Biji Yokot'an in Nacajuca, State of Tabasco, Mexico, during the first quarter of 2013, through a consulting service carried out by its author. This service was carried out through the consulting house CONAS, and it was integrated into the design of several tourist products in the south of the Mexican territory. The application of the project contributed to the rescue of the gastronomic facilities and with the decision to turn the Nacajuca municipality into a tourist destination of the state and the country, in accordance with federal and state strategies and with the will of the local government to do possible the real change.
