Abstract

In the present work, an evaluation of Cleaner Production (PML) in the Production of Milk and Derivatives of the Soy of the Escambray Milk Product Company (EPLE), was carried out which had as objective to identify the main problems that affect the productive process of this unit and to offer alternative solutions in the analysis of critical unit operations. In order to carry out this research, it was necessary to support on management techniques such as: exploration and route in the plant, identification of bad practices, review of documents, expert criteria, brainstorms, mass and energy balances, as well as economic evaluations. As a result, the key points where waste is produced and inefficiencies in the process were identified; In addition, through the study, poor operating practices were determined and losses were quantified, the implementation of a condensate recovery system with economic advantages and a six and a half month investment recovery period was proposed. Finally, a cleaner production action plan is proposed that improves both the environmental performance and its impact on the surrounding ecosystems, as well as the competitiveness of the factory.
