The present research was carried out in three enterprises of food production in the province of Cienfuegos. It was pursued the objective of identifying factors with higher incidence in labor accidents in such companies. The accidents in the last five years in such organizations were taken as reference in the research. It was designed and implemented a procedure for the analysis of labor accidents, obtaining a regression model which allowed explaining the causes of such accidents, based on a set of explanatory variables obtained through the use of interviews, checklists, direct observations, questionnaires, Delphi´s Method. From the point of view of mathematical statistical model, it is used the Logistic Regression Model, Poisson Regression Model, Negative Binomial Regression Model and factorial analysis. The factors with higher incidence in the accidents were the satisfaction regarding working conditions and management of occupational safety and health.
