The investigation constituted a tourist employment activity of the gastronomic Cultural Heritage of meals linked to the coastal and marine territories of the city of Cienfuegos. It was aimed at favoring the creation of tools for the tourist management of gastronomic heritage, especially that related to employment, conservation and promotion of multiple recipes, meals, gastronomic landscapes linked to tourism and local development projects. A gastronomic heritage route was proposed based on the new conceptions of the World Tourism Organization (UNWTO) and the United Nations Educational, Scientific and Cultural Organization (UNESCO) for this type of heritage tourism management tool. The methodology used was qualitative from the method of cultural ethnography, which helps to identify representations, meanings, knowledge, emotions, and enjoyment of authentic and original expressions that distinguish Cienfuegos universally and that need to be used and preserved based on strategic axes. of the territory such as tourism.
