Abstract

The system of assessment of amino acids or of amino acid mixtures in the presence of an excess of formaldehyde is used as an analytical method to monitor the formation of free amino acids during protein hydrolysis. The potentiometric method of assessment with formaldehyde (USP XXIV, 2000) was validated for the quantitative determination of aminic nitrogen in protein hydrolysates from Chlorella vulgaris microalga. The following parameters were evaluated taking into account the classification of the method: lineality, accuracy, exactitude and specificity. The technique is reliable, since it is not affected by interferences caused by other substances present in the hydrolysate. Besides, the statistical processing of the data proved the lineality, accuracy and exactitude of the method. As the validated procedure is simple and rapid, it may be applied to the quantification of aminic nitrogen in batches of protein hydrolysate obtained in our laboratories.
