ABSTRACT A Guide of Good Practices for the dairy production elaborated by the regulatory organisms in Cuba does not exist. There is a lack of necessary requirements in the external documents for a country in which the hand milking practice in small producers' farms is predominant, also a common situation in other countries of the region. A Guide of Good Dairy Practices of Production for Cuba with 226 requirements was elaborated, gathering recommendations of other documents and also some criteria of experts. The components of the guide were classified by order of priority, established by its influence on the hygienic indicators and, therefore, of major importance for safety food. This classification is in use for recommending its application in a step by step way for facilitating the assimilation of so many requirements. The strategy of implanting the Good Practices by phases is designed in this document by four levels division of the requirements according to the defining priority.
