Abstract

Animal slaughter in Ecuador is done in public municipal slaughterhouses where, generally, the conditions are inadequate and an officially adopted guide for Good Practices (GP) is nonexistent. A Guide for GP evaluated for its compliance in five municipal slaughterhouses at Manabi, Ecuador, was proposed in this paper. The guide was produced with the participation of a group of experts who identified the key factors and components to be included through a Brainstorm and a Fishbone Diagram. Each component requirements were selected from six international GP guides. In collaboration with experts and using the Delphi method, scores for weighting and comparing the performance of each slaughterhouse were established. The concordance of experts was determined by Kendall's coefficient. The evaluation was performed with a checklist of the guide requirements. A deficient compliance of the guide requirements was shown by the five slaughterhouses. The non-compliance percentages ranged between 40% and 80%, and the scores achieved were between 0 and 630 of a total of 1000. The facilities and equipment had the lowest compliance percentages. All the slaughterhouses were classified as of low or very low level of implementation of the Good Practices.
